Fruit - Blueberry Streusel Muffins

1/2 cup sugar
1/4 cup butter, softened
1 egg
2-1/3 cups flour
4 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 tsp. vanilla extract
grated zest of one lemon, optional
1-1/2 cups fresh or frozen blueberries and/or raspberries

1/3 cup sugar
1/4 cup flour
2 T. butter or margarine

Preheat oven to 375 degrees.Grease or paper-line 12 muffin cups.

In a mixing bowl, cream sugar and butter. Add egg; mix well. Combine flour, baking powder and salt; stir into the creamed mixture alternately with milk. Don't over-mix! Gently fold in vanilla, lemon zest, and blueberries and/or raspberries (if frozen, no need to thaw). Fill 12 greased or paper-lined muffin cups two-thirds way full.

In a small bowl, combine sugar, and flour; cut in butter until crumbly. Sprinkle over muffins.

Bake at 375º for about 25 minutes or until golden. Yield: 1 dozen.

16 slices bread 8 ounces cream cheese 1 pint blueberries, divided 3 cups milk 3 eggs 1/3 cup maple syrup 1 teaspoon vanilla 1 1/2 cups sugar, divided 1/4 teaspoon nutmeg 2 tablespoons cornstarch 1 tablespoon butter Butter a 13x9x2 pan and cut 10 slices of bread into 3/4" cubes. Spread cream cheese over one side of remaining 6 slices and arrange cheese side up in pan. Sprinkle with 1 cup blueberries. Top with bread cubes. Combine next 4 ingredients and 1/4 cup sugar. Pour over bread mixture.Cover and chill overnight. Preheat oven 350 degrees.

Streusel: 1/3 cup sugar 1/4 cup firmly packed brown sugar 2 t cinnamon Cake: 1 cup sugar 1/2 cup margarine, softened 1 cup Land O Lakes No-Fat Sour Cream (or whatever kind you have) 2 eggs 1 t vanilla 2 1/4 cups flour 1 1/2 t baking powder 1/2 t baking soda 1/2 t salt 1 cup fresh or frozen blueberries (unthawed) Heat oven 350. In med. bowl stir together all streusel ingredients; set aside. In large mixer bowl combine 1 cup sugar and margarine. Beat at med. speed, scraping bowl often, until creamy (1-2 min).Add sour cream, eggs and vanilla.
