Fruit - Blueberry Buckle

1/2 c. margarine
1/2 c. sugar
1 well-beaten egg
2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
4 c. fresh or frozen berries
1 c. brown sugar
1 c. flour
1/2 tsp. cinnamon (optional)
1/2 c. oleo

Cream 1/2 cup margarine with 1/2 cup sugar; add egg and mix well. Sift flour, baking powder, and salt; add to creamed mixture alternately with milk. Spread into greased 9x13 inch pan.Place berries over batter. Combine remaining ngredients until crumbly; sprinkle over berries.

Bake at 350 degrees for about 50 minutes. This recipe is easily adaptable to all kinds of berries and other fruit of your choice, as well.

Butter and flour a 10-inch springform pan.Sift together flour, baking powder and salt; set aside.Cream together butter and sugar on medium speed for about 3 minutes. Reduce mixer speed and add egg and vanilla. Beat until fluffy. Add reserved flour, mixing alternately with milk, starting and ending with flour. Gently fold in blueberries.Pour batter into prepared pan and top with streusel topping. Bake

Can also make this with Raspberry Sauce or Sundried Tomatoes instead of Blueberry pie filling. Will also cook in the microwave in about 3 minutes. Serve with warm French baguette slices. Makes 8 cups (64 servings). 2 pounds Brie cheese 1 (16 ounce) can blueberry pie filling Preheat oven to 350 degrees F (175 degrees C). Place Brie cheese in a medium baking dish. Slather with blueberry pie filling. Bake in the preheated oven 10 to 12 minutes, or until warm and melted. Source: Allrecipes
