Fruit - Blueberry - Blueberry Buckle By Lizabeth

1/2 cup butter, room temperature
2 cups flour
1 1/2 tsp, baking powder
1/2 tsp. Salt
3/4 cup sugar
1 large egg
1 tsp. Vanilla extract
1/2 cup milk
5 cups
streusel topping (recipe follows)

Heat oven to 350 degrees. Butter and flour a 10-inch springform pan.

Sift together flour, baking powder and salt; set aside.

Cream together butter and sugar on medium speed for about 3 minutes. Reduce mixer speed and add egg and vanilla. Beat until fluffy. Add reserved flour, mixing alternately with milk, starting and ending with flour. Gently fold in blueberries.

Pour batter into prepared pan and top with streusel topping. Bake 60-70 minutes. Test for doneness. Cool 10 minutes on wire rack before removing from pan. Wait at least 15 minutes before serving.

Streusel Topping:
1 cup flour
1/4 cup light brown sugar
1 tsp. Cinnamon
1/4 tsp. Salt
6 tbl. Butter at room temperature

Combine dry ingredients. Cut butter into mixture until fine crumbs form.

1/2 c. margarine 1/2 c. sugar 1 well-beaten egg 2 c. flour 2 1/2 tsp. baking powder 1/4 tsp. salt 1/2 c. milk 4 c. fresh or frozen berries 1 c. brown sugar 1 c. flour 1/2 tsp. cinnamon (optional) 1/2 c. oleo Cream 1/2 cup margarine with 1/2 cup sugar; add egg and mix well. Sift flour, baking powder, and salt; add to creamed mixture alternately with milk. Spread into greased 9x13 inch pan.Place berries over batter. Combine remaining ngredients until crumbly; sprinkle over berries. Bake at 350 degrees for about 50 minutes. This recipe is easily adaptable to
