Fruit - Banana Blueberry Oatmeal Muffins

1-1/2 cups all-purpose flour
1 cup rolled oats
1/2 cup sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/4 cup cooking oil
1/4 cup buttermilk
1 cup mashed banana
1 cup wild blueberries (fresh or frozen)

Preheat oven to 400 degrees. Grease or line with paper, 12 muffin cups.

In a large bowl measure first 6 ingredients. Stir to mix. Make a well in centre.

In a small bowl, beat eggs until frothy. Mix in cooking oil, buttermilk and bananas. Stir until about half moistened; add blueberries. Continue stirring just until completely moistened. Batter may be lumpy.

Fill muffin cups almost full. Bake for 17 to 20 minutes or until golden and muffins test done.

1 Box yellow cake mix 3-5 mashed bananas 3 eggs Mix thoroughly, put into loaf pans and bake at 350 til done. Makes two loaves. You can add nuts also and about 1/3 cup oil, if you desire.

5 cups flour 1/4 to 1/2 cup chopped peanuts 1/2 teaspoon baking soda 1 egg slightly beaten 1/4 cup vegetable oil 1 1/2 cup pureed bananas 2 teaspoons vanilla extract Water Preheat the oven to 325 degrees and set a rack on the middle level. Have ready one or two ungreased non-stick baking sheets. Mix the flour, peanuts and baking soda together in large bowl. Gradually stir in the remaining ingredients, except the water, until lumpy but blended. Add enough water a teaspoon at a time to make a stiff dough. Knead by hand until thoroughly mixed or blend everything in
