Fruit - Banana - Banana Pancakes

1 cup all-purpose flour
1 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. cinnamon OR cardamom
1/4 tsp. salt
1 large egg
1 cup mashed ripe banana (about 2 medium sized bananas)
1/3 cup + 1 Tbsp. milk

Preheat griddle to 375 degrees.

In a medium bowl, combine first 5 ingredients.
Stir in egg, bananas and milk. Add a bit more milk if batter is too thick. Batter should be thick but still pourable.

Grease hot griddle with about 1 Tbsp. margarine. Drop batter by about 1/4 cupfuls onto hot griddle. Spread if necessary to about 1/4" thickness. When edges of pancakes appear dry and bubbles appear on top, turn and brown other side.

NOTE: no need to grease griddle between batches.

Makes about 9 pancakes.

Recipe I: 1-1/4 cup sifted all-purpose flour 1/2 tsp. baking powder 3/4 tsp. baking soda 1/4 tsp. salt 1/2 cup peanut butter 1/2 cup granulated sugar 1/2 cup shortening 1/2 cup brown sugar, packed 1/4 cup mashed, ripe banana Preheat oven to 375° F.Sift dry ingredients. Cream shortening, peanut butter and sugars; add banana, then flour mixture; mix well. Shape into 2-inch diameter roll, and chill in refrigerator. Slice onto ungreased cookie sheet, and bake at 375 degrees for 12 minutes. Note: Cookie batter may be dropped by teaspoons on greased cookie sheet. Makes 4 dozen. Recipe II:

1 1/2 cup sugar 1/2 cup butter 2 eggs 1 cup mashed banana 1 teaspoon baking powder 1 teaspoon baking soda 1 1/2 cups flour 1/4 teaspoon salt 4 Tablespoons milk soured with 1 Tablespoon vinegar 1 teaspoon vanilla 1 cup nuts Preheat oven to 375 degrees F.Cream butter and sugar together. Beat in eggs and stir in banana. Add blended dry ingredients, milk and vanilla. Bake in a greased and floured bread pan at 375ºF. for about 45 minutes. Black walnuts are very good in this.
