Fruit - Autumn Apple Salad

1 can (20 ounces) crushed pineapple, undrained
2/3 cup sugar
1 package (3 ounces) lemon flavored gelatin
1 package (8 ounces) cream cheese, softened
1 cup diced unpeeled apples
1/2 to 1 cup chopped nuts
1 cup chopped celery
1 cup whipped topping
lettuce leaves

In a saucepan, combine pineapple and sugar; bring to a boil and boil for 3 minutes. Add gelatin; stir until dissolved. Add cream cheese; stir until mixture is thoroughly combined. Cool.

Fold in apples, nuts, celery and whipped topping.

Pour into a 9-inch square baking pan. Chill until firm. Cut into squares and serve on lettuce leaves.

1 box spice cake mix 2 cans sliced apples, undrained (not pie filling) 1 cube margarine or butter, melted 1/2 cup chopped pecans Preheat oven to 375 degrees F.Dump apples in 9 x 13" cake pan and spread evenly. Sprinkle with dry cake mix. Pour melted margarine all over dry mix. Top with chopped pecans. Bake at 375 degrees for about 40 minutes or until bubbly. Serve warm with vanilla ice cream. 4 eggs 1 1/2 cups sugar 1 cup salad oil 2 cups applesauce 2/3 cup milk 3 1/2 cups flour 2 teaspoons baking soda 1 teaspoon cinnamon 1 teaspoon nutmeg 1 cup chopped nuts Beat eggs, add sugar, oil, applesauce and milk. Combine remaining ingredients, stirring well. Add to applesauce mixture, mixing well. Pour into three 8 x 4 inch loaf pans. Bake at 350 degrees for 1 hour or until done. Will keep for weeks in the refrigerator and months in the freezer. Makes 3 loaves.
