Fruit - Apple - Perfect Apple Pie By Sissiea

5 to 7 tart apples
3/4 to 1 cup of sugar
2 Tbl. enriched flour
1 tsp. cinnamon
1/4 tsp. nutmeg
Dash of salt
Pastry for (2) 9" pies
2 T. butter or margarine

Pare apples and slice thin. Combine sugar, flour, spices and salt. Mix with apples Line 9-inch pie plate with pastry, fill with apple mixture, dot with butter, adjust top crust, sprinkle with sugar. Bake 400 degrees 50 minutes of until done.

Red Hot Apple Pie- omit cinnamon and nutmeg in Perfect Apple Pie. Combine 3 T. red cinnamon candies with sugar, flour and salt.

Flaky Crust:
2 cups flour
1 tsp. salt
2/3 cup Crisco
2 T. melted butter
5 T. cold water
2 T. vinegar

Mix flour and salt. Cut in Crisco and butter until mixture is like coarse crumbs. Add water and vinegar. Mixing with fork, form into ball and chill. Roll out to form 2 crusts. This is foolproof.

4 quarts crab apples 2 cups vinegar 5 cups brown sugar 1 tablespoon whole cloves 2 sticks cinnamon 1 tablespoon whole allspice Wash crab apples and remove blossom end. Do not pare. Combine remaining ingredients and simmer together 20 minutes. Add apples a few at a time and simmer until tender. Pack apples in hot sterilized jars adding syrup to cover apples. Seal. Makes 6 pints.

1/4 c. brandy or cider 1/2 t. ground cinnamon pinch of ground cloves 1 t. freshly squeezed lemon juice, plus zest of 1 lemon 1/4 c. plus 2 T packed brown sugar 2 T unsalted butter 3 Granny Smith apples-peeled, cored, & cut into eighths 3 McIntosh apples, peeled, cored, and cut into eighths Pinch of salt Heat oven to 375 degrees. In a 12 x 14 roasting pan or 11 x 17 baking pan, combine the brandy, cinnamon, cloves,lemon juice and zest, brown sugar, and butter. Add all the apples and toss.
