Fruit - Apple - Cinnamon Apple Slices

4 cups peeled, sliced Golden Delicious apples
1 large sweet onion, jullienned
2 tsp olive oil and 1 tsp butter
2 cans (16 oz. each) whole-berry cranberry sauce
4 T honey
1 T orange zest
1-1/2 tsp. Cinnamon (or if you have left over red hots throw some of them in here to flavor this)
1 Tbsp. milk

Slice apples and onion and saute in pan til crisp tender. Put both cans of cranberry sauce, honey, orange zest and bring to a boil over medium heat, stirring occasionally until mixture comes to a boil and begins to thicken. Remove from heat and stir in apples and onion and cinnamon.

5 large apples, cored and coarsly chopped 1/2 cup cinnamon hearts 2 T. sugar (or more to your taste) Water to cover Place all ingredients in a saucepan. Bring to a boil and immediately reduce heat and simmer until apples are tender, stirring a couple of times to distribute the melting red hots. Cool and refrigerate (or serve warm, if you prefer),

3 pounds apples (10 to 11 apples) 5 cups water -- approximately 3 cups sugar 1 drop oil of cinnamon 2 drops red food coloring Wash fruit; remove stem and blossom ends. Do not pare or core. Cut apples into small chunks. Place in large kettle or Dutch oven. Add enough of the water just to cover. Cover and bring to boiling over high heat. Reduce heat and simmer till apples are soft, 20-25 minutes. Strain juice thru jelly bag. Measure 4 cups juice. In large kettle , stir together juice and sugar until dissolved. Bring to full rolling boil over
