Fruit - Apple - Cinnamon-apple Muffins

2 1/3 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups granny smith apple -- finely chopped & peeled
1 cup low-fat buttermilk
1/3 cup 2% low-fat milk
1/3 cup light ricotta cheese
3 tablespoons vegetable oil
1 tablespoon vanilla extract
2 large egg whites
1 large egg
Cooking spray
3 Tbl. sugar
2 tsp. ground cinnamon

Preheat oven to 400 degrees. Combine first 6 ingredients in a large bowl. Stir in apple, and make a well in center of mixture.

Combine buttermilk and next 6 ingredients (buttermilk through egg); stir well with a whisk. Add to flour mixture, stirring just until moist.

Spoon batter into 18 muffin cups coated with cooking spray.

Combine the 3 Tbl. sugar and 2 tsp. cinnamon; sprinkle evenly over batter in muffin cups. Bake at 400 degrees for 18 min. or until done. Remove from pans immediately; cool on wire rack.

Yield: 1 and 1/2 doz. muffins (serving size: 1 muffin).

2 cups apple juice 2 cinnamon sticks (3-inches each) 1 teaspoon anise seed 3 1/2 cups sugar 1 pouch liquid pectin Prepare and sterilize canning jars and lids according to manufacturers instructions. Measure apple juice into a large saucepan. Tie cinnamon sticks and anise seed in a cheesecloth bag, add to apple juice. Simmer juice and spices for 10 minutes. Add sugar, stirring to dissolve.
