Fruit - Apple - Applelicious Bread

4 cups baking apples, peeled & diced
1 cup finely chopped pecans
2 cups sugar
3 cups flour
2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. allspice
1/4 tsp. cinnamon
2 sticks butter, melted
2 eggs, slightly beaten
2 tsp. vanilla

Preheat oven to 325°. Butter & flour two 9" loaf pans.

In a large bowl, combine the apples, pecans and sugar and stir well. Mix the flour with the soda, salt, spices and butter; add to the apple mixture. Combine the eggs and vanilla and add to the batter. Mix well.

Pour into the prepared pans. Bake 1 hour or until a wooden pick inserted near the center of the loaf comes out clean. Cool in the pans 10 minutes, then turn out onto a rack.

4 lbs. McIntosh apples (about 16) peeled & sliced 1 cup water 1/2 tsp. cinnamon 1/2 cup sugar Put apples in a saucepan. Add water and cinnamon. Bring to a boil. Reduce heat, cover and simmer 15 min. or until apples are tender. Remove from heat, add sugar. Pour into a strainer and stir until it is all through. I usually have to simmer it longer, I just keep checking it. Sometimes I don't strain it I just kind of mash it for chuncky sauce.

1 (9") deep dish pie shell 1/2 lb. lean sausage (such as Jimmy Dean Maple) 1/2 chopped onion 4 TBSP. butter 4 TBSP. brown sugar ( or use 2 TBSP. If using the sausage that is already seasoned with maple) 4 Granny Smith apples, peeled, cored and chopped 3/4 cup shredded cheddar 1-2 egg yolks 2 whole eggs 1/2 milk, half & half of low fat buttermilk 1/2 tsp. tarragon Saute onion until translucent. Add sausage and sprinkle with brown sugar. Break sausage into small pieces and drain on paper towel. Place in pastry shell.
