Fishandseafood - Tuna - Apple-nut Tuna Sandwiches

1 can tuna in water -- (6 oz.) drained
1/2 cup chopped red apple
1/3 cup mayonnaise
1/4 cup finely chopped celery
1/4 cup chopped walnuts
1/4 cup chopped dates -- optional
2 Tbl. finely chopped onion
1 Tbl. sweet pickle relish or green tomato relish
1 tsp. sugar
1/4 tsp. salt
fresh ground pepper -- to taste
6 slices bread -- toasted
6 lettuce leaves

In a bowl, combine first 11 ingredients. Spread 1/2 cup on 3 slices of bread. Top with lettuce and remaining bread.

Yield: 6 servings 1 1/2 pounds albacore tuna fillets, rinsed and patted dry 1 lemon, juiced 2 green onions, chopped 2 tablespoons chopped fresh parsley 1 tablespoon sweet relish 1/3 cup dried bread crumbs 2 eggs Salt and pepper, to taste Vegetable oil Finely chop the tuna with a chef’s knife.
