Fishandseafood - Tuna - Albacore Tuna Burgers

Yield: 6 servings

1 1/2 pounds albacore tuna fillets, rinsed and patted dry
1 lemon, juiced
2 green onions, chopped
2 tablespoons chopped fresh parsley
1 tablespoon sweet relish
1/3 cup dried bread crumbs
2 eggs
Salt and pepper, to taste
Vegetable oil

Finely chop the tuna with a chef’s knife. Place tuna in a bowl and mix in lemon, onion, parsley, relish, bread crumbs and eggs until well combined. Season with salt and pepper.

Shape tuna mixture into 6 round patties. Brush both sides of tuna burgers with vegetable oil and season again with salt and pepper. Cook the tuna burgers in a non stick skillet over medium heat for 5 minutes each side until they are cooked through.

Serve on hamburger buns with whatever you fancy. Some suggestions are cheese, lettuce, tomato, pickles, mustard, ketchup and barbecue sauce.

Prep Time: 20 minutes
Cook Time: 15 minutes

1 can tuna in water -- (6 oz.) drained 1/2 cup chopped red apple 1/3 cup mayonnaise 1/4 cup finely chopped celery 1/4 cup chopped walnuts 1/4 cup chopped dates -- optional 2 Tbl. finely chopped onion 1 Tbl. sweet pickle relish or green tomato relish 1 tsp. sugar 1/4 tsp. salt fresh ground pepper -- to taste 6 slices bread -- toasted 6 lettuce leaves In a bowl, combine first 11 ingredients. Spread 1/2 cup on 3 slices of bread. Top with lettuce and remaining bread.

1 albacore steak about 1 1/2" thick and 8 inches in diameter 8 ounce bottle of BBQ sauce 1 cup beer 4 strips ranch style bacon (thick slice) toothpicks Cook bacon about 2/3 done. Divide steak into 4 fillets and wrap bacon strips around and pin. Mix BBQ sauce with beer. Marinate steaks overnight (if wanted) or at least several hours. Cook over hot coals for 3 to 4 minutes or until done (don't overcook) Baste the steaks heavily while they cool. Serve over a bed of rice with a fruit salad. Another sauce: 3 tab. lime juice 2 tab.
