Fishandseafood - Tuna - Albacore Supreme

1 albacore steak about 1 1/2" thick and 8 inches in diameter
8 ounce bottle of BBQ sauce
1 cup beer
4 strips ranch style bacon (thick slice)
toothpicks


Cook bacon about 2/3 done. Divide steak into 4 fillets and wrap bacon strips around and pin.

Mix BBQ sauce with beer. Marinate steaks overnight (if wanted) or at least several hours. Cook over hot coals for 3 to 4 minutes or until done (don't overcook) Baste the steaks heavily while they cool. Serve over a bed of rice with a fruit salad.

Another sauce:
3 tab. lime juice
2 tab. vegetable oil
2 tab. honey
2 tab. soy sauce
1/4 tsp. ginger
1/4 tsp. cinnamon

Brown the fish on each side for 2 minutes. Add the wine, chopped onion, garlic, laurel leaves, parsley and the chopped tomatoes. Add salt and pepper to taste and stir. Add the water and mix well. Bring to a boil, reduce to low heat and cook
