Fishandseafood - Tuna - Albacore Supreme

1 albacore steak about 1 1/2" thick and 8 inches in diameter
8 ounce bottle of BBQ sauce
1 cup beer
4 strips ranch style bacon (thick slice)

Cook bacon about 2/3 done. Divide steak into 4 fillets and wrap bacon strips around and pin.

Mix BBQ sauce with beer. Marinate steaks overnight (if wanted) or at least several hours. Cook over hot coals for 3 to 4 minutes or until done (don't overcook) Baste the steaks heavily while they cool. Serve over a bed of rice with a fruit salad.

Another sauce:
3 tab. lime juice
2 tab. vegetable oil
2 tab. honey
2 tab. soy sauce
1/4 tsp. ginger
1/4 tsp. cinnamon

Yield: 6 servings 1 1/2 pounds albacore tuna fillets, rinsed and patted dry 1 lemon, juiced 2 green onions, chopped 2 tablespoons chopped fresh parsley 1 tablespoon sweet relish 1/3 cup dried bread crumbs 2 eggs Salt and pepper, to taste Vegetable oil Finely chop the tuna with a chef’s knife. Place tuna in a bowl and mix in lemon, onion, parsley, relish, bread crumbs and eggs until well combined. Season with salt and pepper. Shape tuna mixture into 6 round patties. 1 1/2 lb. fresh albacore tuna steaks 1 tbs. Olive oil 1 onion, chopped 1 can chopped tomatoes (14 oz.) 1 cup dry red wine 2 cloves garlic chopped 2 bay leaves 2 tbs. fresh parsley Salt and pepper to taste 1 cup water In a saucepan add the olive oil and the tuna fish. Brown the fish on each side for 2 minutes. Add the wine, chopped onion, garlic, laurel leaves, parsley and the chopped tomatoes. Add salt and pepper to taste and stir. Add the water and mix well. Bring to a boil, reduce to low heat and cook
