Fishandseafood - Tuna - Albacore Fresh Tuna "spanish Style"

1 1/2 lb. fresh albacore tuna steaks
1 tbs. Olive oil
1 onion, chopped
1 can chopped tomatoes (14 oz.)
1 cup dry red wine
2 cloves garlic chopped
2 bay leaves
2 tbs. fresh parsley
Salt and pepper to taste
1 cup water

In a saucepan add the olive oil and the tuna fish. Brown the fish on each side for 2 minutes.

Add the wine, chopped onion, garlic, laurel leaves, parsley and the chopped tomatoes. Add salt and pepper to taste and stir. Add the water and mix well. Bring to a boil, reduce to low heat and cook covered for 30 minutes.

Uncover the saucepan and let cook another 20 minutes on medium heat until the liquid has reduced to half. The sauce should be thick. If needed let cook longer.

Serve this dish with cooked "Basmati" or white rice of your choice (brown rice can be substituted).

Tip: You can add peeled uncooked potatoes (cut into cubes) to the dish and cook as indicated above.

1 albacore steak about 1 1/2" thick and 8 inches in diameter 8 ounce bottle of BBQ sauce 1 cup beer 4 strips ranch style bacon (thick slice) toothpicks Cook bacon about 2/3 done. Divide steak into 4 fillets and wrap bacon strips around and pin. Mix BBQ sauce with beer. Marinate steaks overnight (if wanted) or at least several hours. Cook over hot coals for 3 to 4 minutes or until done (don't overcook) Baste the steaks heavily while they cool. Serve over a bed of rice with a fruit salad. Another sauce: 3 tab. lime juice 2 tab.

2 pounds lake trout fillets 1/4 cup French dressing 1 tablespoon lemon juice 1 tablespoon grated onion 2 teaspoons salt Dash pepper Cut trout into serving-size portions and place in well-greased, hinged wire basket. Combine remaining ingredients.Baste fish with sauce. Cook about 4 inches from moderately hot coals for 8 minutes. Baste fish with sauce again and turn. Cook for 7 to 10 minutes longer or until fish flakes easily when tested with a fork.
