Fishandseafood - Taramosalata Fish Roe Salad

125g/4 oz smoked cods roe
juice of 1 or more large lemons
2 large slices of white bread,crusts removed soaked in water
75-125 ml/3-4 fl oz olive oil
1/2 small onion grated and the juice drained off

Skin the roe and put in a food processor or blender with the lemon juice. Squeeze the bread dry, add to the mix and blend well. Slowly add the olive oil until the mix is the consistency of mayonnaise. Mix in the onion at the end and add more lemon if wished.

6 to 8 pound rockfish (or local fish), cleaned and scaled Rub fish with lemon inside and out. Salt and pepper, place in greased pan. Stuffing: 1 pound Maryland Blue crab meat 1 heaping tablespoon mayonnaise 1 egg 1 teaspoon mustard 1 teaspoon Worcestershire sauce 1 slice of bread, dipped in water and squeezed dry Salt, pepper and Tabasco to tasteTopping:Corn flake crumbs ButterMix stuffing ingredients well and place loosely in fish. Preheat oven to 350. Sprinkle generously with corn flake crumbs. Dot with butter. Cover loosely with foil. Bake at 350 for 1 hour. Uncover, let brown. Serve
