Fishandseafood - Squid - Yum Hua Pree
1 Banana bud (available at any Asian grocery)1/2 Kilo pork
1 Tablespoon soybean sauce
1 Red onion (American size, theyre very small here and they use several)
4 Medium squids
Chili to taste
1 teaspoon sugar or more to taste
1/4 cup (or so) dried shrimp
1/2 cup coarsely crushed, roasted peanuts
2 small limes
1 bunch spring onions, chopped
1/4 cup fresh chopped cilantro
Oil for frying
3 eggs
Boil eggs while preparing this dish. Slice the banana bud and place it in a bowl of water with the juice of 1 lime (otherwise itll turn black.)
Fry onion in oil lightly and set aside. Fry the pork, squid and shrimp together. Add soybean sauce and chili (if any) about halfway through the frying. Place the pork, squid, shrimp and onions in a bowl and mix in the other ingredients. Slice the eggs in quarters.
Pile the Yum Hua Pree on a serving dish and surround with the quartered eggs.
By the way, the Pree is pronounced like Plee here in the north.
NOTE: Be careful if buying dried shrimp from a Mexican or Latin grocery as they often contain spices that would conflict with this dish.
