Fishandseafood - Shrimp - Shrimp Cocktail By Lake Monster

3 small prawns
1/4 cantaloupe
1/4 red bell pepper
1 Tbl. diced red onion
1/8 tsp. cumin
2 sprigs cilantro
1/2 avocado
uice of 1 lime
Pinch of kosher salt
Pinch of black pepper


Cook prawns in hot water until they turn pink (about 15 seconds.) Chill in cool water, remove shells and chop.

Dice cantaloupe, red bell pepper, red onion and avocado. Add cilantro, salt, pepper and lime juice. Add cumin and mix well. Serves 1.

Add onions, celery, bell pepper and garlic and cook until soft. Add tomato sauce, tomato paste, and remaining spices. Mix well and cook about 5 minutes.

1 lb. cooked shrimp -- shelled and deveined Sauce: 1/2 cup sour cream 4 Tablespoons mayonnaise 1/2 Tablespoon lemon juice 2 Tablespoons chili sauce dash of sugar paprika to taste salt and black pepper to taste 1 red pepper -- finely chopped Divide the shrimp evenly into 4 serving dishes. Combine all the sauce ingredients in a separate bowl, but only half of the red pepper; mix well. Pour sauce over shrimp. Garnish with the reserved red pepper.
