Fishandseafood - Shrimp - Mango-shrimp Salad

1 mango, sliced
4 med. tomatoes, seeded and sliced into wedges
1 avocado, sliced
4 small tomatillos, sliced
half a med. red onion sliced
1 dozen peeled cooked shrimp

Dressing:
4T olive oil
1 T Japanese seasoned vinegar
1 T cider vinegar
1 T balsamic vinegar
1 t oregano
salt and pepper


Place all salad ingredients in a medium bowl. Combine dressing ingredients and pour over salad. Toss gently to coat.

4 1/2 cups water 1 1/2 lbs. Unpeeled medium size fresh shrimp 1/2 package (7 oz) vermicelli or thin spaghetti 1/2 cup butter or margarine 1/3 cup all-purpose flour 2/3 cup chicken broth 2/3 cup whipping cream 3/4 cup (3 oz) shredded Swiss cheese 2 1/2 tblspns dry sherry 1/2 tsp salt 1/8 tsp ground white pepper 2 tblspns grated Parmesan cheese 2 tblspns slivered almonds. Bring water to a boil, add shrimp and cook 3 to5minutes or until shrimp turn pink. Drain well, rinse with cold water, Chill. Peel and devein shrimp, set aside Cook vermicelli according to directions, drain.
