Fishandseafood - Shrimp - Fresh Shrimp On Ice

Fresh cooked or frozen cooked, cleaned, shrimp with tails-on, thawed (61 to 70 ct)
Cocktail Sauce
Crushed ice
Fresh parsley for garnish
Lemon wedges for garnish

Place cocktail sauce in a martini glass. Place glass on a flat, large attractive platter. Cover the platter completely with crushed ice. Place the thawed shrimp atop the ice and serve. (Place a small dish close by for guests to deposit the tails).

Cocktail Sauce:
1/2 cup chili sauce or catsup
2 tablespoons hot cream-style horseradish
1/4 teaspoon sugar
1/2 teaspoon Kosher salt
1/2 teaspoon freshly cracked black pepper
2 teaspoons fresh lemon juice
4 drops Tabasco
1/2 teaspoon Worcestershire Sauce
2 garlic cloves, minced

In a small bowl, mix ingredients together to taste, cover and chill until ready to serve and to develop flavor.

Makes 2/3 cup.

6 c. cold cooked rice 1/2 c. chopped onion 1/2 lb. fresh shrimp, shelled and coarsely chopped 2 eggs well beaten 2 T. cold water to loosen rice Sauce: 4 T. soy sauce 2 T. sherry 1/3 t. salt 1/8 t. freshly ground pepper chopped scallion greens to sprinkle on top Add 2T. cold water to rice and loosen the grains as much as possible. Mix eggs and shrimp in a bowl. Heat frying pan on a high flame; add oil and heat thoroughly. Fry onion to a light brown. Add shrimp and eggs and cook for 2 minutes, stirring constantly.

Fire and Ice Shrimp 1 1/2 lb. raw shrimp (size 30-35 per lb.), unpeeled 1 tsp. crushed red chili pepper, or to taste 1/2 cup rice vinegar 1 Tbl. peeled and coarsely chopped fresh ginger 3 cloves garlic 2 tsp. sugar 1 tsp. salt 1 small onion, thinly sliced 2 green onions, thinly sliced Soak crushed pepper in vinegar for 30 minutes. Meanwhile, bring 3 qt. water to a boil in a large pot. Add shrimp and cook 3-4 minutes or until they turn color. Do not overcook. Cooking time will vary, depending on whether or not the shrimp are frozen.
