Fishandseafood - Sesame Seared Salmon

1 tablespoon sesame seeds
1 teaspoon olive oil
3/4 pound salmon fillets
1 tablespoon honey
2 teaspoons low-sodium soy sauce
1 tablespoon chopped fresh ginger or 1/4 tsp. ground

Place sesame seeds in a nonstick skillet and saute until golden, about 30 seconds. Remove to a plate and set aside. Heat olive oile in the same skillet on med-high. Add salmon and saure 5 min.

Meanwhile, mix honey, soy sauce, and ginger together. Turn salmon; saute 3 min. for a 1" thick piece. Remove skillet from heat, spoon sauce over salmon and allow to warm in skillet 30 seconds. Remove to individual dishes and sprinkle sesame seeds on top.

Serve with Sauteed Sliced Potatoes With Asparagus and red, fruity pinot noir.

1 Salmon about 4 to 5 pounds, either cut into steaks or fillets 1 recipe of brine Brine:1/3 cup sugar 1/4 cup non-iodized salt 2 cups soy sauce 1 cup water 1/2 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp. pepper 1/3 tsp. tabasco sauce 1 cup dry white wine Mix together and pour over fish. 1 salmon fillet 2 tablespoons cider vinegar 2 tablespoons soy sauce 1 teaspoon honey 1 teaspoon vegetable oil 1 teaspoon spicy brown or horseradish mustard 1/8 to 1/2 teaspoon ground ginger 2 tablespoons sesame seeds, toasted 3 green onions, sliced Place salmon in a shallow dish. Combine vinegar, soy sauce, honey, oil, mustard and ginger; pour over salmon. Cover and refrigerate 1 hour, turning twice. Drain and discard marinade. Broil the salmon or grill, covered, over medium-high heat for 15-20 minutes or until the fish flakes easily with a fork. Sprinkle with sesame seeds and onions.
