Fishandseafood - Salmon Cakes

6 oz. cooked salmon, crumbled
1/2 cup cracker crumbs
2 Tbs. mayonnaise
2 Tbs. grated onion
1 egg, beaten
1/4 cup milk
2 Tbs. minced, fresh parsley
Salt and freshly ground pepper
dill weed (optional)


Place all ingredients in bowl and mix lightly. If it seems too dry, add a little more milk or if too wet add more crumbs. Shape into cakes. Pan fry in a little oil until brown on both sides.

1 lb asparagus cut into 1 inch pieces 2 medium green onions sliced 1 1/2 cups shredded Swiss cheese 1 can (6 oz) canned salmon, drained and flaked 1 cup Bisquick original baking mix 1 3/4 cup milk 1 1/2 tsp chopped fresh or 1/2 tsp dried basil 1/8 tsp pepper 3 eggs Heat oven to 400° F and grease pie pan 10 1/2 inches.
