Fishandseafood - Langostinos Newburg

1 pkg. langostinos
4 Tblsp. butter
1/2 cup boiling water
4 Tblsp. flour
1 large can evaporated milk
1/4 cup sherry (optional)
salt, pepper, Accent, nutmeg to taste


Melt butter in boiling water. Add langostinos and simmer a couple of minutes. Add flour and blend. Add evaporated milk and seasonings. Cook until thickened. Add sherry and beat through.

Crumble crackers; mix with melted butter. Spread half of mixture in bottom of 9 x 13-inch baking dish. Add langostino mixture; cover with remaining crackers.Bake at 350 degrees for 45 minutes. Serves 8 to 10 people.

3 cups Cooked chopped langostino 1 cup Mayonnaise 1 Clove garlic; crushed Refrigerate langastino or shrimp until well chilled. Combine mayonnaise with garlic in small bowl. Place bowl in center of serving plate. To serve, arrange langastino around bowl of garlic mayonnaise. Serve with toothpicks for dipping.
