Fishandseafood - Halibut - Steamed Halibut With Tomatillo, Orange And Peppers
8 Tomatillos, papery husks removed1/4 cup coarsely chopped red bell pepper
1 small jalapeno pepper, minced
1/4 cup cilantro leaves
1/4 cup orange juice
2 Tblsp rice wine vinegar
4 5-ounce halibut steaks
In small saucepan, place first six ingredients. Bring to a simmer, and cook over low heat for 5 minutes. Allow mixture to cool slightly.
In food processor bowl, pulse mixture three times, just enough to break up the tomatillos. Be careful not to puree the mixture.
Season halibut with salt and pepper. Place steaks in a steamer over simmering water and cover. Steam for 8 to 10 minutes, until fish is cooked through. Place steaks on plate and cascade sauce over top of steamed fish.

Drain fish on paper towel; dip both sides in breadcrumbs and place in a greased baking dish. Mix together mayonnaise, sour cream and green onions. Spread over fish. Sprinkle top with remaining breadcrumbs and paprika. Bake at 500º F. for 20 minutes or until fish flakes easily with fork.
