Fishandseafood - Halibut - Potato-crusted Halibut

10 oz. bag of crushed potato chips
4-8 oz filet of halibut
1 1/2 oz. olive oil

Get a pan and put the crushed potato chips into the pan and then cover the halibut with the crushed potato chips on both sides. Warm the saute pan, add olive oil. Dip the halibut filet into the potato chips and make sure the halibut is completely covered on both sides. Once oil is warm, add halibut filet into the pan. When the halibut is cooked on one side, flip over. Put into a baking dish and place into the oven at 500 degrees and bake for 6 -8 minutes. Crust should not brown; it should be the same color as the potato chips.

1 cup white wine 1 tsp. salt 1 to 1-1/2 lb. halibut fillet, salmon, tilapia, etc 1 cup mayonnaise 1/2 cup sour cream 1/4 cup green onions fine breadcrumbs paprika Mix wine and salt and marinate halibut in this mixture for much of the day. Drain fish on paper towel; dip both sides in breadcrumbs and place in a greased baking dish. Mix together mayonnaise, sour cream and green onions. Spread over fish. Sprinkle top with remaining breadcrumbs and paprika. Bake at 500º F. for 20 minutes or until fish flakes easily with fork.

4 halibut fillets 4 teaspoons garlic, crushed 2 cups snow peas 2 cups carrots, thinly sliced 1/4 cup green onions, chopped 3 tablespoons fresh dill, minced 1/2 teaspoon black pepper 1/4 cup white wine 4 teaspoons parmesan cheese (nonfat) 1/2 lemon Cut aluminum foil into four 8-x-12-inch pieces, and place a halibut fillet on the lower half of each piece. Spread 1 teaspoon of garlic over each fillet, and top with 1/2 cup of snow peas, 1/2 cup of carrots, 1 tablespoon of green onions, 2 teaspoons of dill, 1/8 teaspoon of pepper, and 1 tablespoon of wine.
