Fishandseafood - Crab Meat Cheese Melt

4 tbsp. butter
3 tbsp. flour
2 1/2 tbsp. cornstarch
3/4 c. chicken stock (homemade)
3/4 c. milk
2 egg yolks, slightly beaten
3/4 tsp. salt
1 1/4 c. crab meat
1/2 c. grated cheese

Melt butter. Add flour and cornstarch. Stir until well blended. Add stock gradually, stirring constantly. Bring to boiling point and boil 3 minutes. Add milk gradually. Again bring to boiling point and add egg yolks and salt.

Butter ramekin dishes. Put in thin layer of crab meat. Cover with sauce and sprinkle with cheese. Cook in broiling oven until cheese melts and brown. Serves 6.

12 slices homemade type white bread, crusts discarded and bread cut into 4 triangles 1 cup fresh lump crab meat, picked over 2/3 cup mayonnaise 2/3 cup grated Parmesan cheese 4 scallions, chopped fine 1 teaspoon lemon juice Preheat oven to 400°F. Toast bread on a baking sheet in oven until golden, about 5 minutes. In a bowl stir together remaining ingredients with salt and pepper to taste. (Toasts and crab-meat mixture may be made 1 day in advance.) Reduce oven to 375°F. Spread crab-meat mixture on toasts and arrange on baking sheet. Bake in middle of oven until puffed,

8 manicotti shells or 20 large stuffing shells 1 (6 oz) pkg frozen crabmeat, thawed. 1 1/2 c ricotta cheese 1/4 cup chopped walnuts 2 TBSP minced parsley 1 TBSP grated onion 2/3 cup provolone cheese, grated Sauce: 1 15 oz cans tomato sauce 2 tsp sugar 1 C chicken broth 3 tsp Italian seasonings Cook manicotti or shells according to directions on pkg. Mix crabmeat and liquid, cheese (ricotta), walnuts, parsley, and onion.
