Fishandseafood - Catfish - Front Porch Fried Catfish

1 cup flour
1 tablespoon salt
2 teaspoons ground black pepper
2 teaspoons ground red pepper
2 1/2 cups cornmeal
1 tablespoon garlic powder
2 tablespoons dried thyme
10 (6-8 oz.) catfish fillets
1 cup buttermilk
Peanut oil


Combine first 4 ingredients in a shallow dish. Combine cornmeal, garlic powder, and thyme in a zip top plastic bag. Dredge catfish fillets in flour mixture, and then dip in buttermilk, allowing excess to drip off.
Place catfish filets in cornmeal mixture; seal bag, and shake to coat.

Pour oil to depth of 1 1/2 inches into a large cast-iron or heavy skillet; heat to 360. Fry catfish fillets, in batches, 3 minutes or until golden. Drain on paper towels, and serve immediately.

2 c. cooked, flaked farm raised catfish 1 1/2 c. grated Cheddar cheese 1/4 c. hush puppy mix 1 1/2 tsp. butter or margarine, softened Tartar Topping (see below) Hush Puppy Crust (see below) Sprinkle half the cheese over the Hush Puppy Crust. Place the flaked fish on top of the cheese. Pour the Tartar Topping over the fish and sprinkle with remaining cheese. Combine hush puppy mix and butter; sprinkle over top of cheese.
