Fishandseafood - Calamari And Sweet Pepper Pasta
3/4 to 1 lb. calamari squid1/2 small red onion
1/2 each: small green and yellow or red bell pepper
1/2 cup broth
2T. dry white wine
olive oil cooking spray
1 clove garlic, mashed
1/4 tsp. dry basil (or use fresh)
pinch fresh thyme leaves
salt, ground black pepper
fettucini, enough for two
Clean and slice calamari into rings, saving tentacles to use. Slice red onion and peppers into strips.
Coat inner surface of 8" skillet with cooking spray , heat, and add calamari; stir-fry for one or two minutes to cook calamari. Remove and keep warm.
Combine remaining ingredients except pasta in same skillet. Cover and simmer for five minutes. Uncover and continue to simmer until most of broth evaporates. Stir in calamari and serve over fettucini cooked al dente.
