Fishandseafood - Brenda's Breaded Fish

3 fillets white fish, about 12 oz
2 c. bread crumbs
1/3 C. grated Parmesan cheese
1 egg white
1 Tbsp. water
Dash of garlic powder
1 Tbsp. melted margarine


Preheat oven to 375. Rinse fish and pat dry.

In a small bowl, mix bread crumbs and Parmesan cheese. In another small bowl beat egg with water. Dip fish in egg, then roll in crumbs to coat well.

Lightly spray a med. sized shallow baking pan with veg. spray. Arrange fish in pan and sprinkle with garlic powder, maybe some lemon pepper, and drizzle melted margarine over.

Bake uncovered about 20 minutes . If it doesn't brown, put under broiler for a few seconds. Garnish with lemon wedges and parsley.

1 1/2 pounds fish fillets 3 tablespoons walnut oil, divided 1/2 cup chopped walnut pieces 1 tablespoon butter 1 tablespoon lime juice Brush fillets with 2 tablespoons walnut oil. Broil 4 inches away from the flame for 4 to 5 minutes. While fish is cooking brown walnuts pieces in a skillet with one tablespoon walnut oil. When toasted, add the butter and the lime juice. Pour over fish before serving.

2/3 c. flour 1/2 tsp. salt 1 Tbsp. white vinegar 2/3 c. water 1 lb. Cod or Halibut fillets Cut fish into 2 x 1-1/2 inch pieces. Rinse well. Pat dry with paper towels. Mix flour and salt together. Mix baking soda and vinegar. Stir vinegar mixture and water into flour mixture; beat until smooth. Dip fish pieces in additional flour to coat. Dip in batter mixture; allow excess bater to drip back into bowl. Fry 4-5 pieces a time in hot (375^) oil until brown, turning once, about 3 minutes. Drain on paper towls.
