6 medium Potatoes, peeled and sliced wafer thin
12 anchovy fillets, drained and cut into piecs
1 onion, diced fine
1/4 teaspoon pepper
2 cups light cream
2 tablespoons butter.


Preheat oven to 350'.

Place a layer of 1/2 the potatoes in a buttered baking dish. Top with anchovies and onions. Sprinkle with pepper and top with the remaining potatoes. Pour cream over the mixture and dot with butter. Bake about 30 minutes or until potatoes are tender and the top delicately browned.

1 c chopped onion2 tbsp olive oil1 c sliced celery with leaves1 tbsp flour3/4 tsp salt1/2 tsp paprika1/8 tsp cayenne pepper4 medium potatoes, peeled and sliced 1/4 inch thick12 oz V-8® juice1/2 c chopped green pepper1/3 c sour cream1 tbsp chopped parsley for garnish Over medium heat, saute onion in olive oil until soft but not brown; add celery.Sprinkle flour over top of onions and celery.
