Drinks - White Hot Chocolate

3 cups half-and-half or light cream
2/3 cup vanilla-flavor baking pieces or vanilla-flavor candy coating, chopped
3 inches stick cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon vanilla
1/4 teaspoon almond extract
Ground cinnamon (optional)

Combine 1/4 cup of the half-and-half or light cream, vanilla-flavor pieces or vanilla-flavor coating, stick cinnamon and nutmeg in a medium saucepan. Whisk over low heat until vanilla-flavor pieces or coating are melted. Remove stick cinnamon.

Add the remaining half-and-half or cream. Whisk until heated through. Remove from heat. Stir in vanilla and almond extract.

4 liter Homogenized Milk 1 Lliter 35% Cream 1 pkg Semi sweet chocolate chips 1 tbsp. Cinnamon 1 pkg Milk chocolate chips Whipped cream Chocolate shavings Combine milk and cream in a large soup pot. Bring to a boil stirring constantly. Immediately remove from heat. Slowly add in chocolate chips in 1/2 cup measurements stirring and melting them into the hot liquid. Add cinnamon. Taste after each addition until you reach desired sweetness and flavour. Pour into mugs and garnish with a dollop of whipped cream, a sprinkle of cinnamon, chocolate shavings, a cinnamon stick and one fresh cranberry.

4 cups whole milk 1 vanilla bean, split lengthwise 10 oz good quality white chocolate (such as Lindt) 2-1/2 tsp brandy 2-5/8 tsp vanilla extract 4 cups hot strong fresh-brewed coffee Pour milk into heavy medium saucepan. Scrape in seeds from vanilla bean; add bean itself. Bring to boil. Remove from heat. Add white chocolate, whisk until melted and smooth. Whisk in brandy and vanilla extract. Using tongs, remove vanilla bean. Return white chocolate mixture to low heat; whisk until frothy, about 1 minute. Pour hot coffee into mugs. Ladle white chocolate mixture over.
