Drinks - No-egg Eggnog
6 cups milk1 package (4-serving size) instant vanilla pudding and pie filling
4 teaspoons rum extract
3/4 teaspoon ground nutmeg, divided
2 cups (1 pint) heavy cream
2 tablespoons confectioners' sugar
In a punch bowl, combine the milk and pudding mix, mix well. Add the rum extract and 1/2 teaspoon nutmeg, mix well and set aside.
In a medium bowl, beat the heavy cream and confectioners' sugar until stiff peaks form. Add half of the whipped cream mixture to the milk mixture, stir until well blended.
Dollop the remaining whipped cream mixture over the top and sprinkle with the remaining 1/4 teaspoon nutmeg. Serve immediately.
Note: If you'd like to make this a bit ahead of time, go ahead but you may need to add some milk to thin it down just before serving.

Blend on high for 5-10 seconds or until smooth and creamy. Add extracts and eggs; blend until well-mixed. Add skim milk and blend until smooth and creamy. Refrigerate until chilled. Pour into punch cups and sprinkle with nutmeg. Best when used within 4 days. Makes 8 ( 4 oz.) servings.
