Drinks - Fruit - Summerberry Cooler For 12

Use your blender to puree three kinds of berries and apple juice concentrate into a refreshing drink.

3 cups fresh strawberries
1-1/2 cups fresh raspberries
3/4 cup fresh blueberries
2-1/4 cups frozen apple juice concentrate, thawed
5 cups carbonated water, chilled


Combine one-third of the berries and 3/4 cup of the apple juice concentrate in a blender container. Cover and blend until smooth. Pour into a large pitcher and slowly stir in 1-2/3 cups of the carbonated water. Repeat twice with remaining ingredients.

Makes 12 servings.

2 ounces coconut cream 1 1/2 ounces crushed pineapple 1 ounce pineapple juice 1/4 cup crushed ice 1 orange slice 1 maraschino cherry Place all ingredients in a blender and blend at high setting until smooth -- about 30 seconds. 1 pint strawberries 3 Tbl. sugar 2 Tbl. water 2 cups ice 1/2 cup Coco Lopez coconut cream 1/2 cup pineapple juice 1 oz. cream or half and half Wash strawberries and remove hulls. Place in a blender with sugar and water. Blend until smooth. Recipe makes 2 cups of strawberry sauce, so you'll have extra. You can freeze any left over for future use. Place ice, coconut cream, pineapple juice and cream or half and half in a blender. Add 1/2 cup of the strawberry sauce. Blend until smooth. Pour into pina colada glasses and garnish with a pineapple wedge
