Drinks - Concord Grape Wine

10 pounds Concord grapes
5 pounds sugar
1 teaspoon yeast nutrient (optional)
1 gallon water
1 package wine yeast

Strip grapes from stems. (There are some people who don't however the wood affects the flavor) Put grapes into fermenter and crush. Dissolve sugar in boiling water and pour over mashed grapes.

Ferment for 2 weeks, stirring daily and squeezing the stock. Strain through jelly bag; pour liquid into sterile bottles, cap with fermentation locks, and let stand for 1 month. At the end of the month the wine should be clear, and all sediment settled to the bottom of the bottle.

Siphon liquid into sterile gallon jugs with fermentation locks (balloons) and let stand for 2 months. At the end of this period the wine should have stopped working and should be read to rack.

4 qt. elderberries 5 qt. boiling water 4 lb. sugar 1/2 lb. seeded raisins 1 yeast cake 1/2 c. warm water 2 lemons -- sliced 2 oranges -- sliced Wash berries and remove from heads. Place in large bowl and pour boiling hot water over them. Let stand for 20 minutes, then strain them through a cheesecloth. When juice is lukewarm, measure. To each gallon of liquid, add the sugar, raisins, lemons, oranges and yeast dissolved in warm water. Stir and put into a crock. Let work for 40 days. Bottle the wine, but do not cap until it stops

1 gallon choke cherries 1 orange, sliced 1 lemon, sliced 2 gallons water 1 package dry yeast 1 gallon sugar Clean cherries thoroughly and grind them in a food grinder. It is not necessary to remove stones. Add the orange and lemon slices. Mix together fruit, water, and yeast. Cover and set aside in a warm spot for 3 to 6 days. Strain the liquid through a clean cotton cloth and add one gallon of sugar for every gallon of cherry liquid. Bottle and seal mixture. This type of wine can also be made from beets or other fruits and vegetables.
