Dips - White Cheese Dip

1 log Cracker Barrel extra-sharp white cheese (12 oz)
1 cup reduced fat mayonnaise
1 tablespoon dried minced onion
about 6-8 drops hot pepper sauce


Shred cheese, mix with mayonnaise and add other ingredients. Microwave on medium for 5 minutes, stirring halfway through. If it is not smooth and creamy when the five minutes are up, microwave another minute or two and stir well. Great with Wheat Thins!

1 pound (4 cups) asadero shredded cheese or Mexican shredded cheese mixture 8 ounces chopped green chiles 1 cup heavy cream 1 jalapeno or serrano pepper, finely chopped salt, to taste Combine all of ingredients in crockpot. Cover and cook on low for about 2 hours, stirring occasionally, or until cheese is melted. Thin with more milk or cream if necessary. Taste and adjust seasoning. For additional flavor, add finely chopped onion, ground cumin, chopped roasted red pepper, etc.. Serve hot from crock with tortilla chips.

6 cups Asadero cheese, shredded 1 small onion, finely chopped 1 teaspoon Tabasco sauce or other commercial hot sauce 2-3 jalapeno peppers, seeded and chopped very fine 2 tablespoons prepared horseradish 2 cloves garlic, finely chopped 1 cup beer Combine all ingredients in crock pot and stir. Cook on low until all ingredients are melted together. Stir again, and serve hot with warm homemade corn tortilla chips (buy corn tortillas, cut into triangles, deep fry until golden, and salt lightly).
