Dips - Tzatziki
1 tablespoon olive oil1 teaspoon vinegar
1 tablespoon chopped garlic
1 cup Greek yogurt
1 medium cucumber -- peeled and small diced
2 teaspoons finely chopped fresh mint
Salt
Freshly ground black pepper
Kalamata olives
1 Slices fried bread
Whisk the olive oil, vinegar, garlic and yogurt together. Season with salt and pepper. Season the yogurt with salt and pepper.Fold the yogurt and mint into the mixture. .Cover and refrigerate until chilled. Serve with black olives and slices of fried bread.
Yield: about 2 1/2 cups

Dips - Vegetable Dip

1 clove garlic, minced 1 tablespoon olive oil 1 1/2 cup plain yogurt 1 tsp lemon juice 1/2 tsp dill (fresh) 1 cucumber, peeled, grated and drained Salt to taste Add first three ingredients together and then mix with rest of ingredients. Chill. Serve chilled with cubes of bread or raw veggies or use as gyro dressing on gyro sandwiches.
