Dips - Polynesian Shrimp Dip

1 whole pineapple
1 pound cooked/cleaned shrimp
black olives, sliced in half
toothpicks with frilled ends
2 cups sour cream
1 tsp. curry powder
1/2 tsp. salt

Clean and cut top off of pineapple. Reserve the top for added decoration on the serving platter. Remove fruit, leaving 1/2 inch wall around inside of pineapple.

Cut fruit into bite size chunks and arrange on toothpicks, startwith a pineapple chunk, shrimp, olive half. Arrange food on carved out pineapple half.

Put a cup for the dip into the pineapple. (May use sour cream container.)Mix sour cream with curry powder and salt. May also add some pineapple juice. Spoon dip into cup in pineapple. Placepineapple on a platter, surround with lettuce and toothpicks of fruit/shrimp/olives.

750g shelled and deveined fresh (cooked) prawns (save some for a garnish) 3 tablespoons lemon juice (or to taste) salt and pepper to taste pinch paprika 125ml safflower/ canola/ light olive oil (approx) Crudites/ bread/ bread sticks to serve. Place prawns, lemon juice, salt and pepper and paprika in a processor/ blender and mix until smooth. Turn it off. Scrape down the sides of the processor/blender. Gradually add the oil until the mixture becomes a smooth paste. (You might not need *all* the oil). Taste for lemon and salt and pepper. Serve in small terrine/ bowl with Crudites/ bread/ bread sticks

Dips - Oven Drawn Butter
1 pound butterPreheat oven to 200 degrees.Place butter in a med. Large stainless steel bowl.Place in preheated oven for about 30 min.Let set for about 15 min. on counter.Carefully skim off the stuff on top.Pour the clarified butter off slowly so as not to disturb the milk solids underneath too much.Discard milk solids.Reheat gently when ready to use.Store in the refrigerator.
