Dips - Almond Chantilly Dip

3 ounce box instant vanilla pudding, prepared as directed on package
1 cup heavy cream, whipped to soft peaks
1 tsp. almond extract


Add whipped cream and almond extract to prepared pudding and mix lightly. Serve with fresh strawberries.

From Sandra Montagano, Lockport Makes 6 servings 4 ounces cream cheese, softened 1/2 cup half-and-half 3 tablespoons instant vanilla pudding mix 3 tablespoons Kahlua or other coffee-flavored liqueur 1 tablespoon amaretto (almond-flavored liqueur) 1 teaspoon vanilla extract Assorted fresh fruit (strawberries, pineapple chunks, orange wedges and/or sliced bananas), cut into bite-sized pieces In a medium bowl, beat cream cheese, half-and-half, instant pudding mix, Kahlua, amaretto and vanilla extract with an electric mixer until smooth. Refrigerate at least 1 hour. Serve with fresh fruit for dipping.

1 medium eggplant, roasted and charred 1 garlic clove, minced 3 tbls. fresh lemon juice 1/2 tsp. salt 1 tbls. minced parsley 1 tbls. fresh dill. Discard the charred skin. In processor combine the eggplant pulp with remaining ingredients and blend until smooth. This can be made a day in advance and chilled.
