Diabetic - Salad - Creamy Garlic Dressing

1/2 cup evaporated skim milk
2 tablespoons fresh lemon juice
2 large garlic cloves, minced
1/4 teaspoon salt
1 teaspoon dried dill weed
1 teaspoon frozen apple juice concentrate
1/4 teaspoon paprika
1/4 teaspoon white pepper
2 dashes sesame oil
Dash red (cayenne) pepper

Place all ingredients in a blender and process until smooth. Chill before serving. Makes about 3/4 cup.

10 cups fresh broccoli, chopped 1 cup raisins 4 Tbsp. chopped onion (I use red onion ) 4Tbsp.Artifical bacon bits Dressing: 10 Tbsp. fat-free mayonaisse 2 Tbsp. apple cider vinegar 2 packets Equal. Mix salad ingredients together in a large mixing bowl. Mix the dressing ingredients in a small mixing bowl. Pour over the salad and mix well. Exchange: 1 vegetable, 1/2 fruit per 1 cup serving.

Diabetic - Apricot Salad
1 (1 pound, 14 ounce) can peeled apricots 1 (1 pound) can crushed pineapple 2 (6 ounce) pkg. orange jello 2 cups hot water 1 1/2 cups syrup drained from fruits 1/2 cup chopped pecans 1/2 teas. vinegar 1/2 cup sugar 3 Tbl. flour 1 egg, beaten 1 can syrup from fruit 2 Tbls. butter 1 cup cream, whipped 1/4 cup longhorn cheese, grated Drain fruits, reserving syrup. Cut apricots into small pieces. Dissolve gelatin in hot water. Add 1 1/2 cups syrup from fruits. Cool. Add fruit and nuts. Pour into lightly oiled 9x13 inch pan. Chill until firm.
