Diabetic - Pie - Fresh Strawberry Pie

1 prepared 9" pie crust (your choice)
2 cups fresh strawberries, sliced
1 (4 serving) package sugar free vanilla cook and serve pudding mix
1 (4 serving) package sugar free strawberry gelatin
1 1/2 cups water


Place strawberries in pie shell.

In medium saucepan combine pudding mix, dry gelatin and water. Cook over medium heat until mixture becomes clear and comes to a boil, stirring constantly. Remove from heat. Pour over sliced strawberries. Chill until set.

Serves 8

Diabetic exchange 1 starch, 1 fat, 1/2 fruit

1 small box sugar free instant Chocolate pudding 1 (8 oz.) fat free Cool Whip, thawed but cold 11/2 cups skim milk 1 reduced fat graham cracker crust Mix pudding and milk, beat till thoroughly mixed, let set for 2 minutes. Add Cool Whip and blend well. Pour into Pie crust, chill for a few hours before serving.
