Diabetic - Diabetic Apple Pie By Schmitty

2 Cans Sliced Apples Drained (Comstock)
2 ts Sweet 'n Low
1 ts Cinnamon
1/2 ts Nutmeg
1 tb Butter or margarine optional)
2 tb Flour
1 c Crushed Unsweetened Pineapple packed in Own juice. Do not Drain.
1 double Pie crust

Preheat oven to 425.

In large bowl combine apple slices and all ingredients except butter. Mix together. Pour into unbaked bottom crust. Dot with butter. Top with vented or lattice crust. Bake for 15 minutes. Reduce heat to 350 degrees and continue baking 25 to 35 minutes or until crust is golden brown.

1 small box sugar free instant Chocolate pudding 1 (8 oz.) fat free Cool Whip, thawed but cold 11/2 cups skim milk 1 reduced fat graham cracker crust Mix pudding and milk, beat till thoroughly mixed, let set for 2 minutes. Add Cool Whip and blend well. Pour into Pie crust, chill for a few hours before serving.

1 Pie Shell -- Unbaked 1 cup Fruit Sweetener (see below) 1 tablespoon Cornmeal 1/3 cup Unsweetened Applesauce 3 tablespoons Water 3 Eggs 2 teaspoons Vanilla 2 tablespoons Coffee -- (very strong) 24 Pecan Halves Preheat oven to 375° F.In large bowl, combine fruit sweetener, cornmeal and applesauce. Beat with electric mixer. In small bowl, blend water and cornstarch until smooth. Add to fruit sweetener mixture and blend. Beat in eggs one at a time. Stir in vanilla and coffee. Pour mixture into pie shell. Decorate top with pecan halves. Bake at 375 degrees F. for 30 to 40 minutes
