Desserts - Yorkshire Pancake With Lemon And Fresh Berries

Pancake:
3 eggs
3/4 cup flour
3/4 cup milk
1 teaspoon vanilla
1 teaspoon sugar
1/4 teaspoon nutmeg
3 tablespoons butter

Lemon Creme:
Whip together the following four ingredients.
2 tablespoons butter
2 tablespoons fresh lemon juice
2/3 cup powdered sugar
1 teaspoon vanilla

2 to 3 cups mixed fresh berries


Preheat oven to 425 degrees. Place butter in skillet with heat proof handle and set in oven.

Mix flour, egg, milk, vanilla, nutmeg and sugar in blender. When butter is bubbling pour batter into pan and return to the oven.

Bake 20 minutes (Do not open oven door during this time. Remove from oven and spread with lemon cream. Top with berries and dust with powdered sugar.
