Desserts - Roasted Spiced Peaches

Butter (for the dish)
6 ripe peaches, halved and pitted
4 tablespoons (1/2 stick) butter, at room temperature
1/4 cup brown sugar
1/2 teaspoon quatre eplces*
1/2 cup heavy cream

Butter a 10- to 12 inch baking dish or another dish large enough to hold 12 peach halves). Set the oven at 400º. Place the peaches, cut sides up, in the dish.

In a bowl, work together the butter, sugar, and quatre epices. When the mixture is smooth, divide it among the peach cavities.

Bake the peaches for 20 minutes. Drizzle them with cream, and bake for 10 minutes more or until the peaches are tender and the glaze bubbles. Serve at once.

*Quatre Epices (Four Spices):
4 teaspoons allspice
2 teaspoons cinnamon
2 teaspoons freshly grated nutmeg
1/4 teaspoon cloves
freshly ground white pepper, to taste

Mix all ingredients in a bowl, then transfer to a jar with a tightly closing lid. Use as directed.

1 lb. Box of Rosa Marina, orzo 2 Large cans of Chunk Pineapple 2 Cans of Mandarin Oranges 1 Large Cool Whip 2 Eggs Beaten 1-1/2 Cups of Sugar 3 tbs. Flour 1 tsp. Lemon Juice from fresh fruit. Drain Oranges and Pineapple reserving the juice. Boil Together eggs, sugar, flour, lemon juice and the reserved juice of the fruit. Cook orzo until tender (per instructions on box) and drain. Pour juice mixture over drained Rosa Marina mix well and let stand overnight. The next day, fold in Cool Whip and fruit. Let stand at least 2-3 hours. Best if let

Crust: 2 c. flour 2 TBS. sugar 1/2 c. butter, softened Filling: 5 c. rhubarb, cut up 6 egg yolks (save whites) 2 c. sugar 1/4 tsp. salt 1 c. evaporated milk 6 TBS. flour Meringue: 6 egg whites 3/4 c. sugar 1/4 tsp. cream of tartar Mix crust ingredients together until crumbly. Press in bottom of 9x13 pan. Bake at 350° for 10 minutes. Spread rhubarb over baked crust. Beat remaining filling ingredients together and pour over rhubarb. Bake another 40 minutes. Beat egg whites and gradually add sugar and cream of tartar. Beat to a stiff meringue.
