Desserts - Raspberry Beaujolais Sorbet

3 c. fresh raspberries
1 c. Beaujolais
2 T. fresh lemon juice
1/2 c. sugar
1/4 c. heavy or whipping cream


Put in a food processor fitted with a steel blade or a blender and process until smooth. Freeze in an ice cream maker, following manufacturer's instructions. Makes 1 quart.

6 ounces dark rum 1/2 cup mint, finely chopped 1/2 cup sugar 1 1/2 cup fresh sour orange juice In a small saucepan over a low flame, heat rum slowly for several minutes to evaporate some of the alcohol. Do not boil. Using a mortar and pestle, mix mint with sugar until it is a paste. In a medium bowl, combine mint mixture with juice, 1 cups water and the rum. Cover and chill three hours. Pour mixture into ice cream maker and freeze according to manufacturer's instructions. Yield: 8 servings.

1 1/2 cups water 1/3 cup sugar 1/3 cup light corn syrup 3 fresh medium pomegranates 2 Tbls. lemon juice Im small saucepan combine water, sugar and corn syrup. Stir over med. heat until sugar dissolves; set aside. Cool to room temp.
