Desserts - Pudding - Persimmon Pudding Recipes By Debbie S

1 quart persimmons (full)
1 quart milk
3 cups flour
3 cups sugar
1 teaspoon soda
1/2 teaspoon salt


Preheat oven to 350° F. and butter a pan.

Mix all ingredients and put in prepared pan. Dot with butter. Bake about 2 hours at 350. Stir frequently, until rich brown.



Perismmon Pudding-2

1 cup persimmon pulp
1 cup sugar
1 egg
Lump butter, size of egg
1/2 cup sweet cream or milk
1 heaping teaspoon baking powder
1/2 cup buttermilk
1 teaspoon soda, dissolved in milk
1 teaspoon cinnamon
2/3 cup flour or enough to make a thin batter


Bake in 350 oven. Do not stir.

2 cups flour 1/2 tea. salt 1 tea. soda 1 cup persimmon pulp 1/2 cup sugar 1/2 tea. cinnamon 1/2 cup milk 1 tea. vanilla 1/2 cup nuts, chopped 1/2 cup raisins, chopped Sift flour, salt, soda and cinnamon together. Pass the persimmon pulp through coarse sieve and add the sugar and vanilla. Add the flour mixture alternately with the milk. Add the nuts and raisins and mix well. Turn into buttered pudding dish, place in a pan of hot water and bake at 350 for 1 hour. Serve hot with lemon sauce, if desired.
