Desserts - Pudding - Apple Tapioca
1 (8 oz). box pearl tapioca1/2 tsp. salt
6 cups cold water
1 1/2 cups brown sugar
1/2 tsp. nutmeg
1 tsp. cinnamon
5 cups peeled and sliced apples
2 Tbsp. butter
Cook tapioca, salt and water over direct heat until tapioca is completely transparent (for best results, soak tapioca overnight).
Butter a 3 qt. baking dish (glass/ceramic works best). Mix spices and sugar and stir into apples. Place apples in baking dish. Pour tapioca mixture over apples (do not stir). Dot
with butter. Cook at 400 degrees, 45 min.- 1 hr, or until apples are soft. Stir every 10 min.(especially middle).
Delicious warm with vanilla ice cream, whipped cream, or plain cream!
Servings: approx. 8.

Combine lemon juice and spices to taste. Pour into top of a double boiler and cook over medium heat, stirring until mixture reaches a boil and thickens. Add remaining chopped fruit and cook until just tender. Cool. Layer pudding and chopped nuts in tall dessert glasses ending with nuts. Chill and serve. Top with whipped topping if desired. Serves 6.
