Desserts - Persimmon Pudding

1/2 cup butter
4 - 6 tablespoons of sugar (according to taste)
1 pint persimmons (after run thru sieve)
3 egg yolks, well beaten
2 1/2 C flour
2 heaping tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. salt
1 pint milk
3 egg whites, stiffly beaten

Cream butter and sugar. Add persimmons and egg yolks; mix until well blended.

Sift together all dry ingredients. Alternately add dry ingredients and milk;mix well. Fold in egg whites.

Bake in greased and floured muffin tins or a cake pan at 375 degrees for 30-40 minutes. The pudding will rise, then shrink.

2 (20 oz.) cans unsweetened crushed pineapple 3 tbsp. cornstarch 1/4 cup flaked coconut 1/4 cup chopped walnuts 1 tsp. nutmeg 1/4 tsp. cinnamon Drain the crushed pineapple through a strainer, saving the juice in a bowl. Reserve 2 cups of pineapple pieces, put the rest in a blender. Add all of the juice and the cornstarch and blend well. Pour into the top of a double boiler and thicken over medium heat, stirring constantly. Mixture will reach the consistency of paste. Add the coconut, nuts, spices and reserved pineapple pieces. Stir, remove from heat and refrigerate. Serves 6. Source: Sweet

Desserts - Pudding Persimmon
2 cups flour 1/2 tea. salt 1 tea. soda 1 cup persimmon pulp 1/2 cup sugar 1/2 tea. cinnamon 1/2 cup milk 1 tea. vanilla 1/2 cup nuts, chopped 1/2 cup raisins, chopped Sift flour, salt, soda and cinnamon together. Pass the persimmon pulp through coarse sieve and add the sugar and vanilla. Add the flour mixture alternately with the milk. Add the nuts and raisins and mix well. Turn into buttered pudding dish, place in a pan of hot water and bake at 350 for 1 hour. Serve hot with lemon sauce, if desired.
