Desserts - Pasta - Chocolate Pasta

3 cups all-purpose flour
1/2 cup cocoa powder
2 tablespoons granulated sugar
Pinch of cinnamon
4 eggs
1/2 teaspoon vanilla extract

6 teaspoons good-quality, clear honey
6 tablespoons chopped pistachio nuts

Sift the flour with the cocoa powder, and stir in the sugar and cinnamon. Make a well in the center of the dry ingredients, add the eggs and vanilla extract, and mix to a smooth dough.

Roll out the dough on a floured surface until 1/8 inch (3 mm thick. With a pastry wheel cut the dough into strips 3/4 inch (2 cm) wide and about 7 inches (18 cm) long. (If you have a pasta machine, you can use it to roll the dough out into the ribbons.)

Cook the pasta in unsalted, boiling water for 3 minutes. Drain and divide between 4 warmed plates. Drizzle a generous teaspoon of honey and sprinkle 1 tablespoon pistachio nuts over each serving.

1 (10 oz.) package Chocoholics Chocolate Pasta 3 tbsp. Grand Marnier 1 cup raspberry sauce 1 pint whipping cream, whipped Combine raspberry sauce and Grand Marnier. Fold whipping cream into mixture. Cook pasta as directed and let cool. Serve over chilled pasta.

Blackberry Sauce:1 cup fresh blackberries or frozen unsweetened, unthawed 1/4 cup sugar 1/4 cup water Mousse:9 ounces good-quality white chocolate (such as Lindt or Baker's), chopped 1/4 cup water 1/4 cup sour cream 4 teaspoons fresh lemon juice 1-1/2 cups chilled whipping cream Additional blackberries (for garnish) Combine 1 cup blackberries, sugar and water in heavy medium saucepan. Bring to boil over medium-high heat, stirring constantly. Boil until mixture is reduced by half, stir occasionally, about 8 minutes. Puree mixture in blender until smooth.
