Desserts - Mulberry Cobbler

1 cup flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
1/2 tsp. vanilla
1 tablespoon butter*
1 1/2 cups sugar, divided
1 to 2 cups mulberries
3/4 cup boiling water

Preheat oven to 375.

Combine first 6 ingredients and 1 cup of sugar in bowl, mixing well. Spread in a 7" x 11" baking dish. Top with mulberries. Sprinkle with remaining 1/2 cup of sugar. Pour 3/4 cup boiling water over batter.

Bake for 25 to 30 minutes. Serve warm or cold with ice cream.

Yield: 6 servings

4 c. mixed berries (strawberries, blueberries, blackberries, and/or raspberries) 1 1/2 c. sugar, divided 1 stick butter or margarine 1 c. flour 2 tsp. baking powder 1/2 tsp. salt 3/4 c. milk Mix berries and 1/2 cup sugar and set aside. Melt butter in a 9 x 13 glass dish. Combine all remaining ingredients and mix until lumps are gone. Pour batter over butter and spoon fruit on top. Bake at 325 degrees for 50-60 minutes.
