Desserts - Mini Fruit Pizzas

1 Tube refrigerated sugar cookie dough
1 (8 oz) package of cream cheese
1/2 Cup powdered sugar
1 tsp. vanilla (preferably clear)
Fruit for topping

Cut the dough into circles at one-and-a-half hash marks. (Make the cookie half again thicker than the official instructions tell you.)

Put the cookies on the baking sheet at least one inch apart so that they can rise and spread into perfect circles. Bake cookies as instructed -- don't add any extra time and do not let them brown; if anything, let them be slightly underdone. Let cool thoroughly. At this point you can freeze the cookies or store for several days in sealed container if you like.

Beat together the cream cheese, sugar, and vanilla until fluffy (or use any other fruit pizza topping you like), then decorate with fruit.

Pizza dough: 2 3/4 cups flour 1/2 cup flour for working dough 3/4 cups milk 5 Tbsp. sweet butter softned 1 tsp baking powder 1 tsp salt Pizza Filling: 3/4 cup ricotta cheese zest of one lemon and orange 2 cups assorted berries 6 Tbsp sugar 1/2 c almonds, sliced for garnish Dough: Preheat oven to 400 degrees. Combine all ingredients for dough. Knead well. Roll out on lightly floured surface to 1/4 inch thickness.Makes 2 crusts. Lightly top crust with sugar. Combine ricotta cheese and zests. Spread over dough. Cover with fresh fruits.Don't mix together

1 pkg.(18 oz.) refrigerated sugar cookie dough 1 quart ice cream 2 cups of assorted toppings such as nuts, coconut, crushed cookies, M&M's, malted milk balls, or candy bars Preheat oven to 350 degrees. Press cookie dough over a 12 inch pizza pan. Bake for 10-12 minutes. Remove from oven and let cool completely. Spread ice cream over cookie crust and sprinkle on toppings. Cover and freeze for at least 3 hours before serving.
