Desserts - Fruit - Pineapple Whip

1 lb. marshmallows
1 can (No. 2) crushed pineapple
1 cup heavy cream
1/2 cup chopped walnuts
1/2 pt. heavy cream, whipped
8 maraschino cherries

Place marshmallows in a bowl. Cover with pineapple. Let stand overnight, tossing several times to soften.

Whip the cream into the mixture, beating until light and fluffy. Put a layer of nuts in bottom of sherbet glasses. Add a layer of pineapple mix. Chill until serving time. Top with whipped cream and a cherry.

1 (4 serving size) vanilla pudding 2 cups milk 8 oz. cream cheese 1 (9 oz.) pkg.Yellow Jiffy® cake mix 1 egg 1/2 cup water 1 (20 oz.) can crushed pineapple -or- 2 (10 oz.) containers frozen strawberries, thawed Cool Whip -or- whipped cream to cover Chopped nuts -or- slivered almonds, optional Preheat oven to 350° F.Prepare Vanilla pudding using 2 cups milk. Crust: 1/2 pound butter or margarine softened 2 tablespoons sugar 1-1/4 cup flour Filling: 1 # 2 can (1 lb. 4oz) crushed pineapple 1-1/4 cup sugar 2 heaping tablespoons cornstarch4 egg whites For crust, preheat oven to 350 degrees. Grease a 9x13 pan. Cream butter and sugar well, add flour and mix. Press dough into bottom and up sides. Bake at 350 degrees for 25 to 30 minutes.For filling, cook pineapple, sugar, and cornstarch until thick. Stir occasionally. Cool. Beat egg whites until stiff. Fold into cooled pineapple mixture.
